Le Sabbie dell’Etna Bianco è un vino che rientra a pieno titolo nella storia di Firriato. Etichetta pioniera dell’enologia del Vulcano, un terroir completamente diverso dal resto della Sicilia, con i suoi inverni freddi e la luce solare meno intensa. Le uve godono di una maturazione più lenta e gli acini si arricchiscono dei loro sentori profumati in modo più lineare. Freschezza e fragranza caratterizzano questo vino, insieme alla persistente linea sapida. Le Sabbie dell’Etna Bianco ammalia per le suggestioni olfattive e gustative che porta in dote. Il suolo vulcanico caratterizzato da un’elevata capacità drenante conferisce alle uve, e in seguito al vino, una peculiare mineralità arricchita dal corredo aromatico del Carricante, che in vinificazione regala eleganti nuance di frutta bianca.

The delicate pink colour, in fact, is accompanied by scents of raspberry and pomegranate in a harmonious path of the senses celebrated by a long and persistent finish. The grapes of Nerello Mascalese, linked to the territories of the volcano by a centuries-old relationship, are exalted in this single rosé produced by Firriato in his cavanera estate thanks to a winemaking process that involves a few hours of film maceration in a press. An important passage, which gives the wine elegance and complexity by giving enthusiasts, even in this version, some of the most surprising shades of one of the most famous and characteristic grape varieties of Etna.

It is a perfect combination between the vines that have their roots in volcanic soils and the mountain climate that only Etna can offer. The evocative glass of the famous and centuries-old Nerello Mascalese sparkling in white in the cellar of Cavanera on Etna is an example of absolute style. The foaming takes place according to the "blanc de noir" method to enhance the organoleptic characteristics of the Nerello Mascalese. After the soft pressing of the ungrated bunches, the winemaking takes place inside the cellar obtained in the typical Etna baglio dating back to the seventeenth century. Gaudensius is a sparkling wine with a refined perlage, fine grain, continuous and persistent, characterised by colours with shades tending to bright gold, with a complex flavour and at the same time of rare elegance.
