Brugal 1888 is a molasses rum with a double ageing up to 14 years: in American white oak barrels ex bourbon up to 8 years and, subsequently, in European red oak barrels ex Oloroso sherry up to 6 years. The first 8 years give 1888 the typical hot aromas of the former bourbon barrel, the second passage of 6 years in that former sherry gives him the most fruity, soft and round aromas, a taste that evolves in the mouth sip after sip and a long and persistent aftertaste.

Then there are two other expressions of peats of the Caol Ila Distillery, lighter, peaty and fruity, representing 15.5%, and 1% of the Highland malt blend aged in custom barrels made of French oak. The remaining 35% is a Laphroaig aged in Hogshead Refill, powerful, smoked, with intense iodised notes dipic from the Islay distillery. It is bottled while maintaining the natural colour without cold filtration.

Un rhum agricole molto complesso grazie alla ricchezza del sottosuolo vulcanico del nord est della Martinica, e in particolare dagli appezzamenti del villaggio di Le Carbet, dove si trova la distilleria. Le canne da zucchero qui coltivate vengono raccolte in parte meccanicamente e in parte manualmente, trasportate alla distilleria e immediatamente pressate negli antichi mulini a rulli mossi dalla macina a vapore. Il succo durante la pressatura viene addizionato di acqua e passa in grandi tini di acciaio inox aperti, dove inizia la fermentazione con lieviti selezionati a partire da un ceppo indigeno isolato sulle canne di proprietà di Neisson. Distillazione lenta nella colonna Savalle in rame del 1952 e un lungo riposo in tini di acciaio, dove viene abbassato molto lentamente il grado alcolico fino a raggiungere i 52,5°. Tutte queste attenzioni nel corso della produzione portano i Rhum Agricole Neisson ad avere una grandissima complessità aromatica.

processi utilizzati per la produzione di Fortaleza Blanco sono fortemente legati alla tradizione, al rispetto dei tempi e alla cura dei dettagli. Questi la rendono una delle migliori tequila al mondo. I tempi di cottura in forno a vapore sono di circa 30 ore, quelli di fermentazione di più di 3 giorni - in tini di legno aperti, da cui il mosto esce a 6° - e quelli di molitura di circa 3 ore. La molitura viene fatta con tahona in pietra vulcanica mossa meccanicamente, il bagasso viene pian piano separato e bagnato con acqua di sorgente per 3 volte, così da separare ulteriormente la polpa dal bagasso, ovvero la fibra che viene scartata e utilzzata per condimare i campi. La doppia distillazione avviene in un piccolo e antico potstill di rame, a cui segue filtrazione a carbone.
Dedicata a Bonaventura Maschio, fondatore dell’azienda di Gaiarine, nato nel 1903, le cui ricerche e il cui lavoro hanno costituito una pietra miliare nel campo dell’attività distillatoria. Le vinacce bianche e rosse in perfetto equilibrio, vengono distillate attentamente. È ideale per chi ama il gusto pieno e delicato di una grappa di grande personalità.
